Noodles that walked a long road

Two thousand years ago, a city stood on the banks of the Yellow River: Jincheng, the Golden City. Caravans crossed the river here heading west, carrying silk to Rome; pepper, cassia and tsaoko came back along the same road and fell into Jincheng's soup pots.

Two hundred years ago, that soup was given a standard: one clear, two white, three red, four green, five yellow. A bowl of noodles gained its name — Lanzhou lamian.

A hundred years ago, lamian travelled east. In Japan it came to be called ramen — the very sound of "la mian". Abroad, it grew into another shape.

Today in Prague, in a shop that once served Japanese ramen, we set the pot back on the fire. We are not changing the bowl — we are letting ramen return to lamian, letting the noodles come home. Lami — the name of the noodles, and the name of the road.

The standard of a bowl — set a century ago in the Golden City

Lanzhou noodles are not a dish — they are a set of rules. How long the broth simmers, how many widths the dough is pulled into, how hot the oil poured over the chilli. The rules have a rhyme Lanzhou has recited for a hundred years:

CLEAR BROTH

A beef broth so clear you can see the bottom of the bowl. Beef bones and chicken simmer all night; the froth is skimmed until only purity remains.

二白
WHITE RADISH

Thin slices of white radish in the soup — sweet, clean, the only "side" in this bowl.

三红
RED CHILLI OIL

Chilli oil red but not harsh — aroma before heat. Hot oil is poured over the chilli in stages, taking only its fragrance.

四绿
GREEN HERBS

Garlic sprouts and coriander are scattered just before serving; green floats on red — only then is the bowl complete.

五黄
GOLDEN NOODLES

Golden noodles — their spring comes from penghui plant-ash water. Pulled by hand before your eyes.
